A classically trained Chef that has returned to his roots after having spent his entire career cooking all over the world
The St. Marys Golf & Country is delighted to announce the hiring of Chef Nathan Brown as the new Executive Chef at the St. Marys Golf & Country Club, located at 769 Queen St. East in St. Marys, Ontario. Chef Brown brings extensive culinary experience, working for Fairmont Hotels and Resorts, Wynn Hotels and Resorts, and Ritz Carlton Hotels, around the world.
After graduating from Georgian College in Barrie, Ontario, Nathan went on to work for The Ritz Carlton Hotels, Fairmont Hotels & Resorts, and Wynn Hotels & Resorts, which allowed him to train with some of the world’s top chefs while executing some premier events and working in top restaurants. He is passionate about his craft and his ingredients. Nathan is back home to pass on what he’s learned In Bermuda, Dubai, Macau, Singapore, Beijing, Shanghai, Kyoto, Bali & Vancouver. “It is very important for me to teach the next generation of Chefs what I’ve learned, to allow our cuisine to evolve, while always staying true to our roots by understanding classical cuisine and traditional methods”, Chef Brown comments.
His goal is to constantly strive to create trends that ensure the St. Marys Golf & Country Club stays at the top of its culinary game as a premier destination in Southwestern Ontario’s wedding and special event scene.
Some of Chef Brown’s culinary career highlights include:
• During his time with Fairmont Pacific Rim in Vancouver, he organized a critically acclaimed FourHands Dinner with Two (2) Michelin Star Chef Julien Royer,
• During his culinary tenure with Ritz-Carlton Beijing, he executed numerous high-profile events for NBA China and the HSBC PGA Men’s Golf event in Shanghai and was selected to Opening Training Teams for new Ritz-Carlton properties in China, Japan and Indonesia, and
• During his time with Fairmont Singapore & Swissotel The Stamford, Chef Brown ran the high-volume banquet and outside catering kitchens, most notably executing Formula 1’s Singapore Grand Prix catering events.
